Goat Cheese with Raspberry Jam in Phyllo cups

We wanted to have appetizers with our Grigio and tried to come up with something from the fridge and pantry.  Combined a few ingredients together, popped it in the over for a few minutes, and viola! A simple appetizer with great flavor and texture!

Mix 1/2 cup chevre goat cheese with 1/4 cup raspberry jam.  Place store bought phyllo cups in mini muffin pan.  Put a scoop (I used the mini ice cream scooper) in each cup, and top with a pecan.  Pop in the preheated oven (350F) for about 8 to 10 minutes.

Cheese and White wine.. perfecto!
